If I want to start over with a server and install a LEMP stack from scratch, how do I completely remove the existing LAMP stack?

You’ll want to remove Nginx. If you want to completely remove everything you can use
apt-get purge nginx.

If you want to keep your configuration files:
apt-get remove nginx

You can uninstall the typical core components via apt-get:

apt-get purge apache2 mysql php.*
apt-get autoclean
apt-get autoremove
